L’Essentiel
The two youngs chefs from L’Essentiel, Charles and Mi-ra, earned themselves the Talents of the Year award from Gault & Millau in 2009, exactly one year after they opened their restaurant in the ritzy resort town of Deauville.  The atmosphere is chic and trendy, with a seasonal Asian/French cuisine in one of the friendliest places in town.  The menu may take you by surprise as it features a Roast Pigeon with turnip purée, a Grilled Canette with a pepper condiment and an Iberian Pluma with sautéed artichokes, but the savory sensations are well worth the culinary risk.
